Classy Chicken

Classy Chicken
Shrio miso paste 1 tbsp
coconut milk 3/4 cup
olive oil cooking spray
1lb 2oz boneless skinless chicken breast
1 cup red pepper
1 cup onion
1tbsp garlic
1tbsp curry powder
1/2 cumin
1 cup peach
1 cup broccoli florets
1 cup asparagus
1 1/2 aged white cheddar
Preheat oven to 400 degrees F
Whisk miso and coconut milk until miso is dissolved
Preheat a non stick fry pan and lightly coat with spray, add the chicken and saute until lightly browned on both sides. Transfer to a large casserole dish.
Return the fry pan to medium heat and respray if needed add the red pepper, onion, garlic, curry powder and cumin and saute for 1 min.
Add miso mixture, peach, broccoli, asparagus and sauteed vegetables to casserole dish. Evenly top with the grated cheese.
Bake for 25 minutes or until the cheese is lightly browned.
This serves 3 large meal at 470 calories a portion or 6 small at 235 calories a portion.

I have never heard of Shrio miso paste. What is this?

Miso paste is a protein seasoning made from soybeans, you will find it in your local organic store, in the refrigerated section :0)
